Day 2 : Chicken Kababs, Satay sauce and a Simple salad

Lunch was a special fare today. Chicken Kababs,  Satay sauce and a Simple salad


Ingredients:

Kabab:

300 grams of chicken mince
salt to taste
1 tsp red chilly powder
1 tsp of coriander powder
1 pinch of cumin powder
1 pinch of garam masala
1 tsp of lemon juice
1 tbsp of bacon fat
skewer sticks (wet it to prevent it from catching fire)
coconut oil to shallow fry

Satay sauce:
10 Cashews
1/2 a cup Coconut milk
1/2 tsp garlic powder
1/2 tsp onion powder
salt to taste
a bunch of cilantro

Salad:
1 onion thinly sliced
few julienne of green pepper
few julienne of cabbage
1 green chilly thinly sliced
3 tsp of lime juice
salt and pepper to taste

Kababs: Mix together all the ingredients for the Kabab. If the mix is too wet, you could add some coconut powder to the mix. Mine held up pretty well. Press the mince around a wet skewer stick and place it on a frying pan with just enough coconut oil to shallow fry.

Satay Sauce: Roast Cashews in a pan. Once golden, remove and add it into a food processor and grind into paste by adding coconut milk into it. Once you have a sauce like consistency, add lemon juice, garlic powder, onion powder, chopped cilantro, and salt to taste.

Salad: Mix in all the veges,green chilly for some spice, lime juice, salt and pepper

I prefer my food a little less spicy and like the flavor of the meat to come through, hence have used less of the spices.

I thoroughly enjoyed this dish. The Satay sauce was to die for.
